The beautifully-lit bar is home to a rarified selection of gins, whiskies and other ingredients for making spellbindingly flamboyant cocktails. Complementing is a range of craft beers, lagers and connoisseur-quality coffees and teas.
The Ice House bar is the perfect cocoon for swapping secrets, savouring intense flavours, putting the world to rights or simply relaxing in good company.
Getting the mix right
Our cocktails are conjured up by the inspired Thibauld, the Ice House’s resident mixologist. He blends our countless superb spirits with a dizzying range of ingredients including coffee beans, rosebuds and dried fruits. The result: miraculously memorable cocktails that evoke one of our prime sources of inspiration, New York’s famed Dead Rabbit bar.
Hailing from Nice in the south of France, Thibauld ventured to Mayo in search of surf. Fortunately for everyone, he stayed after finding his home-from-home at The Ice House.
